每年初冬时节，街边卖炒货的小店门口便会支起一口大铁锅，许多棕色的栗子和无数黑乎乎的小石子伴着糖稀在铁锅里被两个铁制的叶片有节奏地慢慢地翻动，随着铁锅不断地加热，栗子的颜色由浅变深。
这时，一股股栗子特有的香气便飘了出来。
无需老板特别的吆喝，闻到这馋人的香气，许多人停下脚步，买上一袋，津津有味地吃起来。
每到这时，我也会迫不及待地买上一大袋，大快朵颐一番。
炒熟的栗子油亮油亮的，冒着热气，在寒冷的冬季为我们带来丝丝暖意。
趁热吃。
咬一口，把外皮咬破，然后剥壳除膜，把金黄色的栗子塞进嘴里，感觉热乎乎，香喷喷，甜滋滋的。
那滋味真是美极了！还等什么，再来一颗吧！如今，我跟随爸爸妈妈来到上海生活了，每到冬天，我都会怀念北京的糖炒栗子，因为，那是家乡的味道。

看电视、聊天、逛街时，来一斤糖炒栗子，更是是一件很惬意的事情。
栗子有一定的营养价值，当然绝大多数的消费者之所以喜欢吃栗子，原因在于炒栗子那种特有的香、甜、糯味??事实证明，这样开口的栗子能入味，味道确实特别好，购买的顾客也很多。
话虽如此，从安全的角度来说，还是吃不开口的糖炒栗子更好一些。
据了解，炒栗子时，锅里的圆砂和糖在高温下发生反应，会形成焦糖，时间长了以后变成黑色。
焦糖里含有一定的有害成分，是不宜食用的，一般的摊贩和消费者都不了解这一点，炒栗子时，锅里的黑砂一般都会使用很长时间，开口栗子容易黏到这些黑焦糖，被购买的市民吃进肚子里不利于健康。
旋转锅里的焦炭等杂质也会同时渗进栗子的开口部位，吃起来很不卫生。
还要注意的是，大家在吃栗子时，最好别把手上沾的栗子皮上的东西带到嘴里。
