柳州螺蛳粉Liuzhou River Snail Rice Noodle在柳州有着这样一句话,“不食螺蛳粉,枉做柳州人”。

柳州人之所以如此喜爱螺蛳粉,一是因为其鲜、酸、爽、烫、辣的独特口味;一是因为柳州人自古就有吃螺的爱好,再加之米粉算是这里的主食,二者的完美结合当然会使柳州人“爱不释口”了;再者是因为柳州潮湿闷热的气候,人们容易没有食欲,而螺蛳粉的酸辣劲爽刺激了人们的味蕾,“一筷子通气,两筷子发汗,三筷子下肚整个人就通透了”。

There is an old saying in Liuzhou, “If you never eat river snail rice noodle, you are the person from Liuzhou in vain.” The reason why Liuzhou people are so fond of eating river snail rice noodle is its unique taste of freshness, sourness, hotness and spiciness. Another one is because Liuzhou people have the habit of eating river snail, and rice noodle is the staple food of Liuzhou. The prefect combination of these two will certainly makes Liuzhou people “reluctant to say no”. Moreover, because of the humid and sultry climate in Liuzhou, people tend to lose their appetite, but the spicy and sour taste stimulates people’s appetite. “First bite makes people breathe smoothly, second bite sweat, third bite makes the whole body comfortable.”螺蛳粉为广西柳州著名小吃,位居柳州风味小吃之首。

它由柳州特有的软滑爽口的米粉,加上酸笋、木耳、花生、油炸腐竹、黄花菜、鲜嫩青菜等配料及浓郁适度的酸辣味和煮烂螺蛳的汤水。

因有奇特鲜美的螺蛳汤,使人吃一想二。

River snail rice noodle is a famous specialty in Liuzhou, Guangxi, which ranks first among local snacks. It is made of the soft, smooth and tasty rice noodle which you can only find in Liuzhou, with ingredients such as pickled bamboo shoots, black fungus, peanuts, fried dried beancurb sticks, yellow cauliflower, fresh and green vegetables, and rich and moderate sour and spicy taste, as well as boiled river snail broth. Because of its unique and tasty river snail broth, once people eat it will think about the second time.上世纪80年代初期,有几个外地商人途径柳州,饥肠辘辘,但已是深夜。

大部分的店铺都已经打烊,几位商人好不容易找到了一家马上就要打烊的米粉摊,可是摊上已经没有什么吃食了,煮米粉必用的骨头汤已经没有了,只剩下一锅煮螺剩下的螺蛳汤和一些零零碎碎的食材,还有一-些米粉。

可是几位商人饥饿难耐,恳求摊主随便做些东西给他们充饥,摊主情急之下把米粉放到螺蛳汤里煮,又加上了青菜、油炸腐竹以及花生等配菜。

无巧不成书,几位外地商人吃后,对此赞不绝口,表示从未吃过这样的美食。

说者无心,听者有意,摊主将此记在心中,并逐步完善其配料和制作,遂慢慢形成了现在螺蛳粉的雏形。

机缘巧合,满足了饥肠辘辘的外地商人,也成就了日后风靡柳州的一款经典美食。

In the early 1980s, several out-of-town merchants passed through Liuzhou. They were very hungry but it was late at night. Most of stalls were closed, these merchants managed to find a rice noodle stall that was about to close, but there was no food left on the stall. There was no bone soup to cook rice noodles, only river snail soup and some bits and pieces of food materials, as well as some rice noodles. However, these merchants couldn’t bear hunger any more.They begged the stall owner to makesomething to allay their hunger. In haste, the stall owner put the rice noodles into the river snail noodle soup and cooked them with vegetables, fried bean curd and side dishes such as peanuts. Coincidently, these merchants were full of praise after eating it, and said that they had never eaten such delicious food. The speaker was careless, but the listener was intentional, the stall owner remembered this in the heart, and gradually consummated its ingredient and the manufacture method, then formed the prototype of present river snail rice noodle embryonic gradually.五色糯米饭Multicolored glutinous rice五色糯米饭,俗称五色饭,又称乌饭或花米饭,因糯米饭星黑、红、黄、紫、白五种颜色而得名,是壮家用来招待客人的传统食品。
