The way dishes are set on the table

Hot dishes are the main course. usually there are even numbers of hot dishes. Soup is usually the last dish. In some places, however, fish is the last dish, which symbolizes that there will always be a surplus of food for people to eat.
People severed cold dishes first just wanted to let the guest feel relaxed and feel at home, and also, maybe someone who was hungry could eat something at once.
Although Chinese all have certain seating order around table, it still has a little difference between different areas.
