Yellow Tea
• Yellow tea is picked and processed in a similar way to green tea-up to the point of final baking .After work-firing the tea to prevent oxidation . the tea is show cooked over a very gentle heat to ―yellow‖ the tea.

• Minty bitterness(甘) Slightly bitter first, and then comes the slightly sweet taste when you breathe, the tongue and mouth get a cool feeling. If its strong enough, it keeps coming back for a long while and its called 回甘(Returning Gan).

The History of Tea Drinking
» Tea-drinking in China can be traced back to the Zhou Dynasty.
“Tea was discovered by Shen Nong and become popular as a drink in the state of Lu because of Zhou Gong.‖ —Tea Classics “茶之为饮,发乎神 农氏,闻于鲁国 公。” —《茶经 》
• The Tea Classics is the cornerstone of Chinese tea culture, by Lu Yu, who is known as the ―Tea Sage‖.
• This is the first work on the subject. It is really a classic written on the activities about tea, and is a condensed conclusion of the knowledge and facts about tea in Tang Dynasty and the preTang times.
9. After a minute or so, the first few cups of tea will be ready to rink. Now pour the tea into the teacups.

11. After drinking use the tea digger from the tea fool to dig out tea leaves, use the tea needles to pick the spout.

White Tea
• White tea is made in the simplest way possible – simply picked and fast-dried .The tea ferments a little during the drying phase (﹤20℅) .
5. The first round of tea-brewing starts. Pour hot water into the teapot until a little of it spins out of the top .The water should be poured from up high ,non-stop ,in a circular motion around the rim. That is to spread heat evenly to prevent se(涩).

Black tea
• Black tea is also called fermented tea , known as ―red tea ― in China, it is the category which is fermented before baking; it is a later variety developed on the basis of the green tea.

Compressed tea
• This is the kind tea which is compressed and hardened into a certain shape. As compressed tea is black in color in its commercial form, so it also known in China as ―dark tea(黑茶)‖. Most of the compressed tea is in the form of brick, it is therefore generally called ―brick tea‖
Custom in Tea Drinking

•To express thanks to the elders on one’s wedding day
• To pass on the tradition (Guangdong : custom of tea as bride -Price)

Oolong Tea
• Oolong Tea is also called half-fermented tea. As a blend of green tea and black tea ,it has qualities of both green tea and black tea . •It not only has the thick and fresh flavor of black tea, but also has the pleasant fragrance of green tea.
6. Put the lid on the tea pot
7. Use the water in step 4 to wash the teacups with tong
8. Pour the hot water in steep 7 over the teapot after washing to keep the temperature of the teapot as high as possible. A high temperature is the key to Kung fu tea.
Kung Fu Tea
• What is the meaning of ―Kung Fu Cha‖? Kung fu tea is the Chinese tea brewing process that incorporates all the following meanings: hard work, labor, level for achievement, skill, free-time, etc.
3. Tea rinse round starts –add hot water and fill teapot until it overflow a little. Brush away the foam floating or top with the lid.
