本试验采用若羌红枣和哈密大枣作为供试材料,以河南新郑红枣作为对照, 测定了三种红枣果实中内在指标(水分、还原糖、总糖、总酸度、Vc、胡萝h 素、脂肪、膳食纤维、蛋白质、氨基酸、灰分、矿物质元素含量)、物理指标(可 食部分与果核的重量之比、果肉与果皮重量之比、可食率、果肉组织状态)和 总黄酮含量,以期能为生产和相关研究提供理论依据,结果如下:

枣的外在品质指标存在显著的差异性。在国内首次采用扫描电镜对红枣果肉组 织状态进行了分析,结果表明三种红枣果肉组织显微结构之间有明显的差别, 若羌红枣和哈密大枣中水分含量比较少,固形物含量表较高,而河南新郑红遭 与之相反。
4.通过正交试验确定了提取红枣中总黄酮的最佳方案,即50%乙醇、溶媒 量为35倍、提取时间为lOOmin。三种红枣中若羌红枣总黄酮含量最高,可达 到454.20mg/lOOg,哈密大枣总黄酮含量最低为396.24mg/lOOg。经t检验分析, 若羌红枣分别与哈密大枣和河南新郑红枣有显著的差异性,而哈密大枣和河南 新郑红枣差异性不显著。这说明不同的品种和产地之间对红枣中总黄酮含量有 影响作用。
综上所述,品种和产地不仅影响红枣的内在品质质量、物理品质质量,而 且影响红枣中黄酮含量。

Abstract
In this study,Some characters are determined to contrast with zizyphus jujuba dat from Xinzheng of Henan including internal fruit quality(moisture、revertose、 total sugar、total organic acid、the proportion sugar to acid、vitamin C(Vc)、carotene、 grease,dietary fiber,protein,amino acid,ash,mineral elements content),physical quality such as the proportion esculent part to stone、the proportion flesh to seedcase、food percentage、flesh tissue state and flavones ofzizyphusjujuba dat that came from Ruoqiang and Hami,in order to offer theoretical foundation for produce and relevant research.The result is as follows:
1·With determining nutritional ingredients,red date from Xinzheng of Henan is the highest in the contents of moisture、revertose、total acid、fat、total dietary fiber

Adopts to scanning electron microscope to analysis the flesh tissue state of three kinds of red date for the very f'wst in the domestic.The result shows that there are

2.通过t检验分析,若羌红枣与哈密大枣:水分、还原糖和蛋白质含量存 在显著性的差异:其它营养成分含量不存在显著性的差异。若羌红枣与河南新 郑红枣:水分、脂肪、TDF、IDF、SDF、蛋白质含量存在极显著的差异性;还原 糖、总糖、总酸度含量存在显著的差异性;氨基酸、灰分、矿物质元素含量不 存在显著的差异性。哈密大枣与河南新郑红枣:水分、总酸度、脂肪、TDF、IDF、 SDF、蛋白质含量存在极显著的差异性;总糖含量存在显著的差异性;还原糖、 氨基酸、灰分、矿质元素含量不存在显著的差异性。
3.经测定哈密大枣可食率最大,可达到90.9%,若羌红枣可食率为89.9%, 河南新郑红枣可食率为86.9%。而若羌红枣的果皮占可食用部分的9.09%,哈密 大枣的果皮占可食用部分的10%,河南新郑红枣的果皮占可食用部分的25%,因 此若羌红枣和哈密大枣果皮占可食用部分的比例比较小,而河南新郑红枣的果 皮占可食用部分的比例相对来说比较高。经过对三种红枣外在品质指标t检验 分析可以得出:新疆的这两种红枣在外在品质质量上没有显著的差异性:若羌 红枣与河南新郑红枣中可食用部分与果核重量之比和可食率含量没有显著的差 异性,但是果肉和l果皮的重量之比却有显著的差异性;哈密大枣与河南新郑红
